Chocolate mousse inside chocolate cups



Don't waste cups-make edible cups! Yeah, I have to admit that the chocolate cups fascinates me because the concept is fascinating , you are making your own supply, how cool! Of course the most important is what these cups are caring inside, which in this case is an extremely delicious and creamy mousse with liquor and ground hazelnuts. I prefer mousses that doesn't contain gelatin, like this one, without gelatin the mouses maintains most of its creamy texture and it is quite impressive how thick it gets only from the egg yolk mixture I made; I didn't even had to cool it to thickens, it happened instantaneously.
I'm not sure if I like the  similarity look between these cups and cupcakes, specially because these cups are way more elaborated than a cupcake! Maybe next time instead of using mini cupcake liners as a mold I'm going to use a balloon (yes, balloon) like a  mini one and at the end I just have to pop it and remove the balloon from the chocolate.




Ingredients:
for chocolate cup-
170g bittersweet chocolate (I used 60% cacao)
for mousse-
130g bittersweet chocolate
2 large egg yolks
2 tbsp confectionary sugar
1 1/2 tbsp water
1 cup heavy cream
1/4 cup ground toasted hazelnuts (if you don't know how to toast and peel hazelnuts watch my chocolate tart video)
2 tbsp Amarula liquor or Hazelnut liquor (I used rum but it didn't taste as good)
optional: chopped toasted hazelnuts on top or cacao powder

plus: mini cupcake paper liners

If you don't have a pastry bag just spoon the mousse inside the cups. If you don't feel like making the cups (shame on you=) spoon your mousse inside a nice glass you have and it will also look fantastic.

  1. Funny timing! I was going to make chocolate cups last night and fill them with a caramel mousse, but I ended up making a Citrus Olive Cake instead. These look beautiful - and tasty! ;)

  4. your videos are lovely and this recipe is divine but with the pale pink font, i can barely read the recipe. (i hope you're not insulted- it's a lovely color but readers might not be able to read it against the white background. just an fyi : p

    Hi, I do understand your point . from my home the color is totally readable but there were times when I was on somebody else's computer that I couldn't read it =(
    I'm gonna darken the color a little bit and see if it looks better but you can also darken your monitor too cause monitors too bright are bad for your eyes. I'm sorry and hope the change makes it better for you =)

    Thanks for your recipe! I can't believe how easy the chocolate cups were. Definitely going into the regulars. One problem though, I couldn't get my mousse to get stiff enough. I don't know what I was doing wrong. I whipped my cream as much as possible without curdling. They still tasted really great though. I'm trying your macarons tomorrow :)

    1. Blend the egg yolks, powdered sugar and water. Melt the chocolate (au bain marie), get your cups and put the chocolate in them, don't forget to do the side's as well, when you're done doing this put them in the fridge. Mix the egg mixture 6minutes with handmixer au bain marie. When you're done doing that mix it 3 extra minutes with the electric mixer. Then put the egg mixture with the chocolate and mix with the handmixer (idk if you call it that btw). Mix the cream till you get a good texture, when you're done with that. Put the cream in the egg/chocolate mixture but in 3 parts. 1st part mix, 2nd part mix, 3rd part mix (mix with a spoon) when done, take your choclate cups out the fridge take them out the cupcake forms. put the mousse in a pastry bag and squirt in the chocolate cups, of you don't have a pastry bag spoon it in the cup. Optional : make the chocolate cups with white chocolate. You can also put white chocolate curls on the mousse. You can also put sprinkles on the mousse, hope it's understandable since english isn't my first language :)

    1. It's a little less than 1 cup (when the chocolate is chopped). Don't worry about the hazelnuts, it is totally optional ;)
