Roasted Strawberry Ice Cream

Summer time, perfect time for ice cream and strawberries. Making ice creams at home doesn't necessarily require an ice cream machine and I explain everything in the video, it won't be as smooth and as creamy but it will look and taste like an ice cream. 
When adding fruits such as strawberries to your ice cream it's good to be careful because of the water content, once it releases water it turns into ice crystals when frozen and it compromises the texture of your cold treat. 
Ice creams are a little bit tricky to make, if you don't get the egg base right the ice cream doesn't gain volume and smoothness and you basically fail. You don't need many ingredients to make it and here you will learn a basic base that could be flavored with an infinite of combinations, the vanilla base is custardy and great by itself as well.


In this recipe I roast my strawberries in the oven before adding to my vanilla base and this process is good not only to eliminate the water content of the strawberries but also to concentrate all the flavors and caramelize the sugars, basically you are intensifying the flavors and making an amazing, better than commercial ice cream. 



The balsamic vinegar, oh well, the vinegar, don't you dear thinking that this is "an invention of a creative snobby chef" because it is not! The balsamic vinegar highlights the sweetness from the strawberries, it caramelizes in the oven and you almost don't notice it, it just enhances the flavors in general.


Summer is time for any type of frozen dessert but, you should also know the difference between ice cream, gelato, sorbet, sherbet, spoom and granita in order to understand their properties, everything is explained in detail in the video instruction here.
Oh, I can't wait to spoon some of this inside 2 chocolate chip cookies. Uhmm!


Ingredients:
For strawberry flavor:
1 pound fresh strawberries
1 tbsp balsamic vinegar
2 tbsp granulated sugar
2 tbsp light corn syrup
For vanilla base:
1 cup whole milk
1 cup heavy cream
1/2 vanilla bean 
5 egg yolks
100g granulated sugar

Remember to always use fresh and good ingredients since the recipe only requires few items, every little thing will strongly affect the final taste.
