Lemon Frozen Yogurt + Giveaway(closed)


This lemon frozen yogurt has nothing to do with the average frozen yogurts you can get at "YO" places. This frozen yogurt holds the real lemon flavor that is released instantly as it touches your tongue, all of that happens because the only fat that contains in this recipe is butterfat (from the heavy cream) and  butterfat melts at body temperature so the explosion of flavors happens as soon as you put the first spoon in your mouth.

The amazing tanginess from this recipe is achieved by using regular plain yogurt that is strained to gain greek yogurt texture, it really is the secret ingredient. Regular yogurt has a more remarkable flavor and that's were the real yogurt taste comes from. When in season you can use meyer lemons instead of regular lemons, they are sweeter and has  more of a floral taste but the recipe will maintain the same. 


A lemon is 6% citric acid and that's where the sour taste comes from. You may thing that yogurt and lemons have both tart characteristics that shouldn't be put toguether but the truth is, they complement each once the sweet ice cream base is added. By the way, tanginess and sourness are two different things ;)

All the details to achieve the ultimate creaminess in an ice cream without any ice crystals is taught in the video so I will stop here my blah blah blah.


recipe inspired by Jeni's Splendid ice cream:
Ingredients:
1 1/2 whole milk
1/2 cup heavy cream
2/3 cup sugar
1/4 light corn syrup
2 tbsp cornstarch
4 tbsp cream cheese ( preferable Organic Valley that contains real cheese enzymes)
1 1/4 cup plain yogurt (plan ahead: place a sieve with cheesecloth over a bowl, pour the yogurt, cover with plastic film and leave it overnight in your refrigerator to dry, next day, discard the water)
zest from 2 lemons
Lemon Syrup:
Juice from 3 lemons
3 tbsp of sugar

    1. Oi patricia, isso é xarope de glucose vendido pela marca Karo. Se nao encontrar utilize mel, o unico problema é que o mel da um sabor muito intenso mas da certo tambem ;)

      Bom, se vc nao encontra o fermento biologico seco voce pode sim usar o fresco mas dissolva ele da maneira que o fabricante ensina ou da maneira que vc esta acostumada antes de adicionnar na massa. O croissant é um pão e contanto que vc utilize fermento de pão esta tudo bem ;)
